Ingredients

600 grams of figs of your preference

40 grams of feta cheese
10 grams of sugar granules
15 grams of extra virgin olive oil
3 grams of dry yeast
1 Lemon
Fresh rosemary
Thick salt
Fine salt
Pepper

Method of preparation

1 . Start by putting the flour in a bowl, add 300 grams of water to room temperature, yeast, 15 grams of oil and sugar, and knead well until you get a smooth, homogeneous mass. Add the salt and knead again. Then in an average speed mixer for 7 to 8 minutes, or by hand for 10 to 12 minutes.

2 . Let the dough rest, covered with a slightly damp cloth, from 20 to 30 minutes at room temperature.

3 . Transfer the mass to an oiled surface and open it with moist hands.

4 . Wrap the dough longitudinally and fold it over yourself to form a ball. Put it in the bowl and let it rest, covered, during the night in the fridge.

5 . Spread the dough on a baking machine, preferably 35 x 20 centimeters lightly greased with oil. Let the room temperature rest for at least 30 minutes and then spread the dough with the fingertips until the whole surface of the baking pan is covered.

6 . Let it rest for an hour.

7 . Cut the figs in half and dispose of them on the focus, with the pulp facing upwards. Sprinkle with thick salt, rosemary and a thread of olive oil. Bring it to the oven at 220 °C for 20 minutes, or until it is well golden.

8 . Remove from the oven and decorate with splattered feta cheese, ground pepper and lemon scrapes.

9 . Instead of sugar, you can use honey in the dough. Then just enjoy yourself!
