Here's the recipe for Berlin balls with granny pumpkin dough

Ingredients for the Berlin ball dough

600 grams of flour
100 grams of butter
100 grams of sugar
10 grams of yeast
2 eggs (the size you have at home)
100 grams of milk
1 orange (both shavings and juice)
100 grams of pumpkin puree

Ingredients for Berlin ball cream

2 eggs
4 yolks
500ml Milk
80 grams of maizene
150 grams of sugar
1 spoonful full of vanilla essence

Method of preparation

To make the marbles of Berlin pumpkin:

1 . Put it all in the blender to knead until you've got the dough well dented! (will be ready when we get an elastic mass that we stretch well without breaking)

2 . Make balls between 80 and 100 grams and wrap them well.

3 . Let light well then fry in the oil heated at 170oC.

4 . After fries pass through still warm granulated sugar, for
that sugar ‘grabs’. Then book and let it cool.

How to make the cream step by step:

1 . Take 400ml of milk with sugar to the fire until it starts boiling, save the
remaining milk.

2 . In a bowl put the maizena, add the cold milk and stir well with some wire sticks.

3 . Then add the eggs and yolks and move again well.

4 . Add the boiled milk, still warm, stirring non-stop, put this mixture back into the pot and take the medium heat, stirring always, until the cream starts to thicken a bit. Remember, it always gets thicker after it cools down.

5 . Finally, already out of the fire, wrap the extract or aroma of vanilla and let it cool.

6 . With the help of a pastry bag, fill your balls one by one.

Before being a classy dish, the couscous already had a transmontana version with poached egg and beans “of the pods”. Take note of what you will need to make this dish of Chef Hélio Loureiro presented in the Square of Joy in RTP.
