O mochi is a fresh japanese sweet that conquered the world – if it weren't for the pereito snack for hot summer afternoons.
This frozen little cake promises to help cool, but to warm the soul when it needs a candy.
This recipe, with more fruit than usual, from the culinary blog Kikkoman runs away from conventional flavors and ingredients, but the chef ensures that the essence is the same.
Take note of what you will need to taste this fresh sweet:
Ingredients
For filling:
10 grams of butter without salt
1 apple (Granny Smith or any other choice), cut into 3 cm cubes
20 grams of brown sugar
1 teaspoon fermented soy sauce
For mochi mass:
50 grams of glutinous rice flour
50 grams of sugar
75 grams of water
Maize flour for rolling (or potato starch)
For decoration:
Mint leaves
Method of preparation
For filling:
1 . Melt the butter in a frying pan.
2 . Add the apple cubes and fry until slightly browned.
3 . Add sugar and caramelize the apples. Add to the soy sauce stirring well and then take it to the fridge.
For mochi dough:
4 . Place the glutinous rice flour and sugar in a bowl, mix and gradually add water until a thick dough is formed.
5 . Place the dough for 2 minutes in the microwave, stir and heat for another 1 minute.
6 . Sprinkle the work surface with cornmeal, place on top of the mochi dough, wrap with a thickness of 2 to 3 mm with lots of cornmeal and let cool. Cut 2 to 4 circles with a cookie cutter (approx. 7 cm).
7 . Place a portion of prepared apple cubes in each circle, fold the dough on it, press well and come back.
8 . Dispose of the dishes and serve with decoration of mint leaves.
