As sweet, delicious and satiating as chocolate pancakes – is how the blog Orange Lima Nutrition describes this recipe, but get ready for a alternative ingredient to chocolate.
A carob is the host of this recipe. The plant with a cocoa-like appearance and flavor, according to the same source, “results deliciously well” in these pancakes.
They say that in Portugal, it is commonly used in Algarve sweets, but it is believed to have been brought by the Arabs from the coastal areas of the Middle East.
Curious to prove this recipe that results from a cultural mix? They're vegans! (no milk, eggs or honey) and “super, super fluffy”.
If you do not use sweetener, these chefs ensure that these pancakes may even be suitable for babies, “since carob does not have the stimulating effect of cocoa”. However, the introduction of this food is recommended only after 24 months and after medical advice.
What if it's left? Can you really freeze them?
If you don't have time to make pancakes every morning, then the ideal thing is to actually choose to make a bigger amount on the weekend and then freeze. To do so in the most appropriate way, these experts leave a suggestion:
After cooling, align the pancakes on a tray and take the freezer for 30 minutes. “This will create an outer layer and then you can stack them in a bag, to save space, without sticking together.”
To thaw, they suggest that it take 1 to 2 minutes to microwave in the defrosting function “it is very important that you do not take this step at maximum power, because it can get very hard”
Carob pancakes recipe
1⁄2 cup wheat flour
2 tablespoons carob flour
1 tablespoon peanut butter powder (optional)
1 tablespoon ground flaxseed
1 teaspoon baking powder
1 pinch of sodium bicarbonate (optional)
3⁄4 cup soy drink (a little less if you do not use peanut butter powder)
1 tablespoon of fruit vinegar
1 tablespoon of olive oil or avocado oil
1 tablespoon of agave syrup (or other sweetener)
1 teaspoon vanilla aroma (optional)
Method of preparation
1 . In a large bowl, mix the dry ingredients. Adds the damps and wraps with a wire rod – the dough should be thick;
2 . Heat a non-stick pan in medium heat, grease it with a little olive oil, and pour the two tablespoons of pasta per pancake, vertically – this is fundamental for them to be naturally round and cute;
3 . When the edges are cooked and there are bubbles on the surface, it turns with a spatula and cooks a few more seconds. Remove and let cool on a grill while finishing the rest.
4 . To serve you can use agave syrup, fruit, such as raspberries and passion fruit and other toppings of choice.
