“Even though I'm a chef, there are nights when I just don't feel like cooking. When this happens, my first option is usually Viva Chicken, an expanding chain specializing in Peruvian-style roast chicken.”

Roast chicken: The detail that makes a difference

To the magazine the chef said that the chicken is always juicy and well seasoned. He also sometimes chooses to buy in supermarkets, such as Costco. This is where it turns out to be important to be aware of a detail that will make all the difference when choosing which chicken it takes home.

“I always check first the time it was packed, because it gives me a good indication of chicken freshness and moisture retention” explains. So the best thing is always to choose one that has been packed for less time. This only happens in spaces that usually pack the chicken. This question does not arise when the customer chooses the chicken from a window, for example.

He also left a tip to be able to use all the roast chicken that is bought. He claims that 28% of the chicken that is bought ends up being wasted. Frederick J. Tiess claims that they are elements that are perfect for broths, soups and more. “They are elements with enormous culinary value.”
