Os mushrooms are one of the most versatile ingredients for summer recipes, but end up losing all the fun when they start shrinking.

They are not the only ones, as we all know, but there are ways around this culinary phenomenon, which according to some chefs, is a “novice error”.

We know the tricks for octopus not to shrink – record here – but after all, what can we do to make sure the mushrooms get big and showy?

Take note of these chef tips!

To make the most of this ingredient you may need to change even the utensils. The Food Network recommends using a large, hot frying pan. In addition, it stresses the importance of not filling the skillet too much: If you have to cook large quantities, the ideal is to cook them phasely.

To the blog All Recipes, chef Alex Guarnaschelli explains that the secret to juicy mushrooms begins before it goes to the fire.

“ Mushrooms can even be passed by water quickly, provided they are dried and cooked immediately thereafter. The important thing to avoid excess water is the way to cook, not so much washing ", describes.

To ensure that the remaining steps do not spoil what was done earlier, warns of the need to “cook in strong heat to brown rather than to boil in the released liquids”.

The BBC Good Food reinforces previous procedures and adds a detail:  “Salting only near the end, to avoid early release of water.”.
